Ingredients
  

  • 420 g grated beetroot
  • 1 teaspoon dried oregano or 5-6 sprigs fresh oregano, finely chopped
  • 8.3 g salt

Method
 

  1. Wash and peel beetroot, then grate using large holes (or use a spiralizer)
  2. Mix thoroughly with oregano and salt
  3. Pack tightly into jar, layer by layer, pressing down firmly
  4. Leave maximum 1cm headspace under the lid
  5. Ferment at room temperature, sealed airtight, on a tray until fermentation completes
