Ingredients
  

  • 230 g sweet potato (any color) more vibrant colors typically signal a higher concentration of beneficial compounds such as beta-carotene and anthocyanins
  • 1 tsp mild madras curry powder or you can use your own variant
  • 1 tsp chili flakes
  • 500 ml 2% salt brine solution

Method
 

  1. Begin by peeling and washing the sweet potato thoroughly
  2. Cut into small cubes (around 1x1cm)
  3. In a large bowl, mix the cubed sweet potato with curry powder and chili flakes until evenly coated.
  4. Loosely pack the seasoned sweet potato cubes into a sterilized mason jar.
  5. Pour the prepared 2% salt brine over the vegetables until completely covered, leaving maximum 1cm headspace below the lid.
  6. Ferment at room temperature in an airtight container, placed on a tray to catch any overflow. Continue fermentation until bubbling activity subsides completely.

Notes

You can mix different types of colored sweet potatoes in a single fermentation jar, but keep in mind that the crispiness will vary between the varieties. This is due to differences in starch composition and fiber structure among the colors, which affect texture after fermentation. Mixing colors adds visual appeal and flavor complexity, but expect some variation in the firmness of the final product.
